It's Day 1 (Monday), and I've decided after much deliberation to take the Whole 30 plunge. I'll write more about how I feel about it later ... I'm still not sure. So for now, all I'm going to do is take a mental and physical inventory. Despite the fact that I haven't had the foods I normally eat and crave, I actually feel quite fine. A little headachy, but not too bad.
Weight: 154 (last weigh-in for a month)
Hunger level: Low.
Appearance: puffy eyes, double chin, the beginning of jowls, bloated stomach
Joints: Tennis elbow hurts constantly. Achy when I get out of bed. Stiff after sitting for an hour.

- Breakfast: Egg white omelet, spinach, mushrooms, tomatoes, avocado, fruit, coffee with tiny bit of cream.
- Lunch: Almond butter, cashews and blueberries.
- Snack: 3 pieces of salami (cut up), mixed with cherry tomatoes and 1/4 avocado. Drizzled with a little rice vinegar, salt & pepper.
- Dinner: Pork carnitas (ready-made from Publix, didn't add the sauce; heat and eat) in lettuce wraps, cabbage slaw (shredded slaw package, lime juice and a little apple cider vinegar) and cauliflower rice, chamomile tea.
I'd bought the cauliflower rice from Trader Joes and tried to doctor it up. Added a little tomato paste and seasonings, but I could never get the consistency right. It ended up tasting very watery and crunchy and pretty gross. Didn't eat much of that. (Update: ended up tossing it out later.)
