Wed - Surgery day
Believe it or not, I've been looking forward to getting this surgery done. If for no other reason than to be able to take some decent meds and to get this knee feeling better.
Being able to stay home from work for a few days was a perk, too.
I had to be there at 8:00 AM, and couldn't have anything to eat after the previous midnight. The funny thing was ...being on Whole 30 made that easier. I was hungry a little in the morning, and I really wanted some coffee, but I didn't have that STARVING feeling, like I was going to die or pass out if I didn't eat. I've had surgery before and can attest that's not how I felt before.
Fast forward to after surgery, I woke up completely out of it. And although I'd been at the surgery center for three hours, the nurses seemed to be in a little bit of a hurry to free up the bed and get me on my way. So they pulled my sundress on (yes, it's now in the 70s here) and rolled me out to the car.
I was more tired than hungry, but I knew I needed to get some food in me. So I ate some of the snacks I'd packed (a banana and some beef jerky). Tony stopped at Wendy's, and I even though his burger smelled good, I really didn't want any.
I finally got settled in at home, and spent the rest of the day dozing in and out of sleep.
When Maya got home from school, she made me some hard-boiled eggs and hot tea. And then I slept some more.
A few weeks ago, I'd decided to order six meals from Freshly (I had a coupon for $39), and it coincided perfectly with my surgery week. That way, I could stay on track and not have my family jump through too many hoops and ladders to accommodate mom's "crazy way of eating." Most of the meals on their site are Paleo-friendly, but not necessarily Whole 30-friendly (e.g., beans, quinoa, brown rice, etc.). So I picked the ones that looked as close to compliant as possible (and doubled up on a few).
Later that night, Tony heated up one of my Freshly meals. Chicken Caponata, which was super tasty.
"Chicken coated with a blend of finely crushed almonds, herbs and aromatic spices, then roasted to a golden brown perfection. Topped with Caponata, a Sicilian-style roasted eggplant and tomato stew, featuring a vibrant mixture of vegetables, sweet raisins and tangy capers."
I'm going to try and re-create that! I've never cooked with eggplant, but it was deelish.
