Whole 30 - Day 2

This morning I woke up without any remarkable difference. And despite the fact that I had a very light dinner, I didn't feel hungry at all.

My elbow and knee still ache, and I've got an upcoming surgery scheduled. But mostly what that means for me is that it's good I'll be eating well because I clearly won't be working out.

Better to work my brain muscles then!
  • Breakfast: Frittata with egg, bacon, spinach, mushroom and hash browns. Coffee w/coconut milk.
  • Lunch: Lettuce wraps with pulled pork, cilantro and cabbage slaw, small Fuji apple.
  • Snacks: Larabar (Cashew Cookie), banana chips
  • Dinner: Chicken sausage stew with  root vegetables and kale (parsnips, butternut squash, red potato), hot tea, mandarin orange
I altered a stew recipe I found on Pinterest, and used Chicken Sausage instead of smoked turkey sausage or kilbasa. I won't do that again. Chicken sausage is good if you fry it up on the stove, but I found out the hard way that once you add it to a soup or stew, it breaks down and gets mushy in liquid. So that was kind of gross. Otherwise, this soup would've been awesome!

I'll definitely try making it again, but next time I'll use a much heartier meat.
