Whole 30 - Day 27

Friday

Last day working from home this week. It's been a nice run.

I've gotten very lazy about planning meals. Or maybe it's just become easier to find something in the fridge and just eat it without being picky or finicky.

That's actually another good thing that's come out of this month. I used to give mealtime way too much thought. And if I hadn't planned for lunch or dinner, I'd go through the list of restaurant options in my head, asking myself, "What do I have a taste for?" Usually, what came to mind wasn't always healthy. Especially if I already near starving when I started thinking about it. So I'd rotate between Chick Fil A (which we frequented at least twice a week), pizza, Burger King or Zaxby's. Quick easy and thoughtless.

Now, I don't seem to get that "starving" feeling anymore. If I'm hungry, I mostly just want something to take the edge off. But I'm also much more likely to eat leftovers from the fridge. Because chances are, I spent a good deal of time preparing that food, I know it was good the first time around, and I don't have those cravings for anything in particular anymore. So food is nothing more than that . . it's just food.

Like right now. . I realize I've skipped lunch, which wasn't intentional. I just didn't eat breakfast until late, and then I snacked on some guacamole and plantain chips. So for the time being, I'm good. Although, I think I need to make some more plantains because those were the bomb!

Also, I made some more Scotch eggs this morning, and I found a better way to make them. Rather than use ground pork and try to create my own sausage, I bought turkey sausage from the store. Did it have sugar in it? Probably, but oh well. If so, it's not much.

I added chopped parsley and some red pepper to give it a kick, rolled it around my hard-boiled egg and then rolled in a thin layer of crushed pork rinds. Baked for about 30 minutes at 400, and oh yeah! That's the way to go. Less fat than pork, and even more tasty. Some people call them protein pellets, which just sounds gross. But technically, that's what they are.
  • Breakfast: Scotch egg and coffee with almond milk
  • Snacks: Plantain chips and guacamole
  • Lunch: N/A
  • Dinner: I can't remember. :(  Pretty sure it was some form of leftovers, though.
